I modified this slightly for ribs. Some of the best I’ve ever had! I marinated for 12 hrs beforehand with tequila, lime, and the dry rub for extra flavor. I recommend this recipe to anyone and everyone!

Pellet will work great. And I would recommend the hardwood blend for this. All very natural and pleasant smoke flavors.

I just bought a smoker for my husband for Father’s Day! Stumbled upon this recipe and I think I’m gonna go buy him a pork belly so this can be the first thing he tries. Quick question. It’s a pellet smoker, will that work? Also, which type of wood pellets would you recommend? I got him cherry, apple, mesquite, and a hardwood blend that has white oak, red oak, and hickory.
