Yup! I would season, wrap and truss. Then place in the fridge to be cooked a couple hours later!

This was my first smoke ever and I overcooked the hell out of it. STILL AMAZING. Great recipe. I hope to get better at managing temperature! Salmon burnt ends tomorrow!

Enjoyed this but it was a little too salty for my taste. Not sure if that was down to the bacon or rhe seasoning.

It can but it wont render the bacon very well and will cause the pork to steam instead of smoke. Id recommend the oven instead of the smoker if you dont have one.

Try par-cooking the bacon then wrapping. Speeds up the process and makes better crispiness!

I love this recipe and have made it several times. I would prefer the bacon to be crisper. I’ve moved it to a hot grill after glazing which worked but over cooked the tenderloins. Any suggestions?

Yes but it bison will cook faster so be careful not to overcook it!
